Frenchman Mtn (NV)
This mountain provides the backdrop for every picture taken of the Las Vegas Strip. It is easy to get to for all tourists and locals, and seems like a natural FKT for Vegas. The view from the top (Lake Mead to the East and Vegas to the West) is outstanding. There is a Strava segments for the ascent, the descent, and round trip.
Rocky Mountain Grand Loop (CO)
A version of the old "Cook-Zumwalt Route" (which Cook and Zumwalt did in 24 hours in 1932), as been outlined by backpacker.com. Here's the description:

Starting and ending in Sandstone Quarry turn out off of Red Rock Loop.
This is a very popular route with a big pay off view of Vegas and the surrounding peaks.
