Ramona Falls is one of the most popular trails / hikes in the Mt Hood National Forest. At 7.1 miles round trip and ~1000 feet of elevation gain it is very accessible. Though do be warned the seasonal bridge that went over the Sandy River washed out several years ago and the Forest Service never replaced it, so you do have to forge over logs in the river. This can be very challenging early in the Spring and Summer when snow is melting and the river is raging and high.

Mill Creek to Point Lookout Loop

This is a fun loop near Black Mountain, North Carolina that sends you downhill for the first half of the run and uphill for the last half. It winds you through the beautiful Pisgah National Forest, right around Kitsuma ridgeline.

It's already a Strava segment but I think it deserves an FKT route. It's fast on the way down and just a gradual up on the last half coming up the greenway with wonderful views of Kitsuma the whole way up.

Certainly has some time to shave off!
